Zucchini Fritters

Ingredients
  • 1 medium-large zucchini coarsely grated
  • 1/2 cup Greek yogurt or sour cream
  • 1 clove garlic minced or chopped
  • Lemon zest optional
  • 1 teaspoon lemon juice
  • Pinch of sea salt to taste
  • Black pepper to taste
  • 1 large egg
  • 1/4 cup all-purpose flour
  • 1/4 cup panko breadcrumbs
  • 1 Tbsp. parmesan cheese
  • 1 green onion chopped
  • 1/2 tsp. thyme
  • Fresh chopped basil or parsley or 1/2 tsp. of each dried
  • Virgin olive oil for frying
  • 1/2 tsp. chipotle or hot sauce optional
