Cassava Peanut Butter Cookies

Ingredients

  • 1 Cup Carmeta’s Cassava Flour (Coarse) sifted
  • 1/2 Cup Cane Sugar
  • 1/2 Cup Brown Sugar
  • 3/4 Cup Peanut Butter Crunchy is our preference
  • 1/2 Cup Butter softened
  • 1 Egg
  • 3/4 Tsp Baking soda
  • 1/2 Tsp Baking powder
  • 1/2 Tsp Salt

Preparation

  1. Preheat oven to 375 degrees F.

  2. In a large bowl or food processor, mix together sugars, peanut butter, butter, and egg.

  3. Combine dry ingredients, then add to the sugar mixture and mix until combined.

  4. Shape dough into 1 ¼ inch balls. Place balls on an ungreased cookie sheet, about 3-inches apart.  

  5. Flatten balls in crisscross pattern with a fork dipped into sugar.

  6. Bake for 7-9 minutes. Cool 5 minutes and serve.
