Sweet Potato Vanilla Cake

Ingredients

  • 2 1/2 cups Carmeta’s Sweet Potato Cake Mix
  • 3 Eggs
  • 1/2 cup Oil
  • 1/2 Tbsp Vanilla essence
  • 2/3 cup Water
  • 1/4 cup Sugar

Preparation

  1. Preheat oven to 325 degrees F.

  2. In a bowl mix eggs, oil, vanilla essence and water.

  3. Add cake mix and sugar to wet ingredients and mix thoroughly.

  4. Fill greased mini-loaf pan to ¾ level with batter.

  5. Bake for 30 minutes or until golden brown.

Cook's Notes

For Muffins: fill greased muffin cups with tablespoons of batter and bake 20 minutes.

Tip:

Add 1 cup of mashed banana to the wet ingredients to make delicious Sweet Potato Banana Cake or Muffins!
