Veggie Sausage & Pasta

Ingredients
- 1 lb pasta any type will do
- I 14 oz veggie sausage
- 1 shallot finely minced
- 1/2 tsp. salt
- 1/4 tsp. crushed pepper
- 2 cloves garlic minced
- 12 large basil leaves washed and chiffonade
- 3 vine-ripe tomatoes diced and sprinkled with salt
- 3 Tbsp. olive oil
- 1 cup grated parmesan cheese
Preparation

In a pot, bring salted water to a boil, add pasta and cook according to package instructions. When cooked, remove from heat, drain and set aside.

To a hot skillet add 2 tablespoons of olive oil. Add shallots and sauté for 1 minute. Add garlic and sauté for another minute.

Add the sausage, breaking it up into smaller pieces; sauté until brown then add drained pasta and mix to combine.

Add tomatoes with liquid, parmesan cheese, basil leaves, salt and crushed red pepper and stir.

Drizzle with remainder of the olive oil.
