Ingredients
- 2 1/2 cups Carmeta’s Sweet Potato Cake Mix
- 3 Eggs
- 1/2 cup Oil
- 1/2 Tbsp Vanilla essence
- 2/3 cup Water
- 1/4 cup Sugar
Preparation

Preheat oven to 325 degrees F.

In a bowl mix eggs, oil, vanilla essence and water.

Add cake mix and sugar to wet ingredients and mix thoroughly.

Fill greased mini-loaf pan to ¾ level with batter.

Bake for 30 minutes or until golden brown.
Cook's Notes
For Muffins: fill greased muffin cups with tablespoons of batter and bake 20 minutes.
Tip:
Add 1 cup of mashed banana to the wet ingredients to make delicious Sweet Potato Banana Cake or Muffins!
