Made from baked potatoes, eggs, flour and vegetables, Fiesta is pretty easy to make!

Ingredients
  • 4 medium Irish/English potatoes about 1½ pounds
  • 1 medium chili pepper
  • 1 medium green sweet pepper
  • 1/2 small onion about ¼ cup chopped
  • 4 eggs room temperature
  • 1/2 cup whole milk
  • 1/2 teaspoon salt
  • 1/2 cup all-purpose flour
Preparation
  1. Peel and dice potatoes then boil or steam until tender; drain well.
  2. Dice the green pepper, chili pepper, and potatoes; set aside.
  3. Preheat oven to 350 degrees F.
  4. Beat the eggs well; add milk, salt and flour and mix well. Gently fold in the peppers, onions and potatoes and stir well to incorporate.
  5. Pour the mixture into a greased 8-inch oven-proof dish and place in the oven. Bake, uncovered, for 30 to 40 minutes or until center is set.
  6. Remove from oven and let rest for 10 minutes before cutting and serving.
