Haiti Coconut Sugar Cakes

“These chewy-looking chunks of goodness are not brownies. They are homemade, melt-in-your-mouth, coconut milk and sugar cakes by yours truly. They are what we call here in Haiti, Douce Kokoye or Coconut Douce.” – Annick Megie, Tchakayiti  

Douce Kokoye (Coconut Sugar Cakes)

Ingredients
  • 3 cups coconut milk
  • 1 cup sugar
  • 1 cinnamon stick
  • 1 drop of vanilla essence
  • Key lime zest
Preparation
  1. Mix all the ingredients (except the vanilla) in a thick-bottom pan. Let the mixture boil for 45 minutes to 1 hour.
  2. Once the liquid thickens, add the vanilla and let cook until the preparation is thick enough that it pulls from the sides of the pan, or turns a brown shade.
  3. Spread onto some parchment paper and let cool…bon appétit!
